This keeps the batter in place to create flat, even layers of sponge. Once the cake has baked, flip it upside and peel the silicone mat off the sponge. It reveals a flat surface that’s ready to be topped with cream and fruit.

And, when you’re not baking roulade, you can use the roulade rolling mat for roasting vegetables, making mousses or fruit gels.
